Last week I had the first lentil soup… in my life!
Don’t laugh, for some reason I think I was scared of it.
I know, hilarious!
My home growing up was a very meat & potatoes dinner spot. Mom was a fantastic cook, it just tended to focus on meat & potatoes. Once we left, the menu changed… a little.
So finding meatless dishes was foreign to me.
Mustering up some courage, we tried Alton Brown’s lentil soup recipe.
So not only was I trying lentils, it was of my own hand! Yes, I know you think I’m brave ;).
It. was. great.
Not to mention easy! We didn’t hand blend it, so great texture.
Here’s to trying something new!
P.S. Lentils are protein & fiber rich. Start slow & drink lots of water unless you’re on a fiber routine!
